In our home muffins hold a grand place of honor in the hands of the youngsters. These travel helpful little cakes are, I think, the perfect food; specifically for little kids. Preheat oven to 400 degrees. Mix flour, oatmeal, nutmeg, baking powder and baking soft drink. Include applesauce, milk, brown sugar, egg, oil. Preheat oven to 400. Combine dry ingredients together. Include pumpkin, milk, vanilla, butter and egg, mixing lightly twice. Add raisins, and stir just until moistened. Batter will undoubtedly be lumpy. Fill muffin cups 2/3 full, and bake 18-20 minutes or until passes toothpick test.
